Leche de Tigre: Peru’s “Tiger’s Milk”
Order ceviche in Peru and you’ll hear about leche de tigre — literally “tiger’s milk.” It’s the heart of the dish, and a legend all its own.
What it is
Leche de tigre is the marinade that gives ceviche its magic — fresh lime juice blended with ají, garlic, onion, cilantro and a little fish. The acidity gently ‘cooks’ the raw fish, turning it firm and opaque. It’s bright, tangy and a little spicy.
A drink of its own
