Our Story

A Family Kitchen from Northern Peru, in Spring

Inka Brasas was born from a family. Edwin Campos came to the United States from Lima, Peru, in 1977, and Chef Gladys followed in 1996. They brought the recipes they grew up with: Mama's home cooking, full of the bold flavors of northern Peru.

On November 4, 2023, the family opened Inka Brasas on FM 2920 in Spring, TX, to share true, traditional Peruvian cooking with their neighbors. Chef Gladys, Edwin's wife, runs the kitchen. She trained at the D’Gallia Institute in Lima and later as an international chef in New Jersey. Today she cooks the dishes she grew up with: pollo a la brasa roasted over live coals, ceviche made to order and lomo saltado straight from the wok.

Inka Brasas is family-owned and operated. Chef Gladys works in the restaurant every day alongside her husband, Edwin, and their children, Steve and Allison. Many of our guests have become regulars. Chef Gladys loves bright, acidic flavors, and that's why her ají verde, our green chili sauce, became famous with our customers.
