Anticuchos are Peru's legendary grilled skewers — marinated in a deep-red ají panca sauce with garlic, cumin and vinegar, then seared over high heat until the edges char and caramelize.
It's the smell of a Lima street corner at night: smoky, savory and impossible to walk past. Served with potato and a side of our house ají.
