What is Chifa?
Some of Peru’s most popular dishes aren’t purely Peruvian — they’re chifa, the delicious fusion of Chinese cooking and Peruvian ingredients.
A cuisine born in Lima
When Chinese immigrants arrived in Peru in the 1800s, they brought the wok, soy sauce (sillao) and stir-frying. Combined with Peruvian ingredients, the result was chifa — so beloved that Peru has thousands of chifa restaurants today.
What to order
The two icons are arroz chaufa (smoky wok-fried rice with egg and scallions) and lomo saltado (beef stir-fried with onion, tomato and soy, over fries and rice). Both are on our menu — comforting, savory and a perfect introduction to chifa.
